🌙 Ramadan healthy Quinoa and Chickpea Salad 🥗
  • Ingredients:

    • 1 cup quinoa, cooked
    • 1 cup of dried chickpea (soak them overnight) or 1 can of chickpea. 
    • 1 cucumber, diced
    • 1 cup cherry tomatoes, halved
    • 1/4 cup red onion, finely chopped
    • 1/4 cup fresh parsley, chopped
    • Juice of 1 lemon
    • 2 tablespoons olive oil
    • Salt and pepper to taste
  • Instructions:

    1. In a large bowl, combine quinoa, chickpeas, cucumber, cherry tomatoes, red onion, and parsley.
    2. In a small bowl, whisk together lemon juice, olive oil, salt, and pepper.
    3. Pour the dressing over the salad and toss until well combined.
    4. Chill in the refrigerator for at least 30 minutes before serving.
